Chicken Piccata

Chicken breast cutlets are dusted in a seasoned flour, pan-seared and served with a light caper and lemon white wine sauce.

Cooking Instructions

  1. Thaw in refrigerator. Cook within 2 days of being thawed.
  2. Cook pasta (½ package) or rice according to directions.
  3. Meanwhile, preheat 2 Tbs oil in a large nonstick pan over med-hi heat.
  4. Empty the flour/lemon zest mixture onto a plate (paper is fine) and dredge chicken cutlets in flour, coating both sides.
  5. Cook 3-5 minutes per side or until chicken is just cooked through (you may need to work in batches depending upon the size of your pan).
  6. Remove chicken from pan and set aside.
  7. Add contents of sauce bag to pan and ADD 1 CUP WATER. Bring to a boil, whisking frequently.
  8. Reduce heat and simmer rapidly for a few minutes to thicken.
  9. Serve chicken over pasta/rice and then cover with sauce.
