Chicken or Pork with Mango Peach Salsa – Serves 1

An all-natural chicken breast or pork tenderloin medallions are seasoned, baked, and then topped with a refreshing salsa of diced tomatoes, mangos, peaches, cilantro, onion and spices.  Includes side of seasoned potatoes.  The salsa has a tiny kick to it (considered mild spice level).

Cooking Instructions

DO NOT DEFROST – COOK FROM FROZEN Preheat oven to 350°. Remove lid (careful, foil edges are sharp). Remove salsa cup and place on counter to thaw. Bake tray on middle rack for approximately 25-35 minutes or until pork reaches an internal temperature of 145. Carefully remove from oven and serve with mango salsa.
