Fire roasted veggies and shredded cheese are “rolled-up” in thin slices of chicken breast or flank steak, seasoned and then cooked (you can thaw or cook from frozen).  It doesn’t get much more low-carb or keto-friendly than this.  Gluten-free, however there is trace gluten in the fire-roasted vegetables so it is not recommended for those with severe gluten sensitivities/allergies.
