A 9″ graham cracker crust is first filled with a rich cheesecake layer and then topped with a pumpkin cheesecake layer.  This gets baked in the oven at home and then chilled overnight before serving.  It is great as is but adding a dollop of Cool-Whip(R) or whipped cream kicks it up another level.  Even the taste-testers that do not like pumpkin pie loved this recipe!  Serves 6.
