A six ounce salmon fillet is marinated and baked alongside vegetables in an authentic Japanese sauce of mirin, brown sugar, tamari and seasonings.
Note – The nutritional info provided is assuming you consume all of the mirin sauce in the dish. To greatly reduce the sugar and sodium content, avoid consuming the extra sauce.
Preheat oven to 400. Remove lid (careful, foil edges may be sharp). DO NOT PUT THIS LID IN THE OVEN.
Bake on middle rack for 15 minutes. Remove pan and carefully turn salmon fillet over. Add 3 Tbs of water to the pan and return to oven. Cook an additional 10-20 minutes (thicker fillets will take the longest to cook) but do not overcook for best results! Salmon should flake with fork and reach 145°.
