Seared and Smothered Medallions

Chicken breast or pork tenderloin medallions are seasoned, pan seared and then simmered in a light gravy with mushrooms and fresh rosemary.  Serve over provided mashed potatoes or rice.

Cooking Instructions

Thaw in the refrigerator.  Cook within 2 days of being thawed. Cook to internal temperature of 145˚ (pork) or 165° (chicken).

  1. Begin cooking the provided mashed potatoes or rice.

COOKING INSTRUCTIONS FOR STANDARD RECIPE

  1. Dust both sides of medallions with half of the flour mixture, shaking off any excess.
  2. In a large pan over medium, heat 1 TBS butter and 1 TBS oil.
  3. Add medallions, cook approx. 8 min (turning once) or until browned.
  4. Add remaining flour to pan and immediately CONTINUE WITH STEPS 6-8 BELOW.

COOKING INSTRUCTIONS FOR GLUTEN FREE RECIPE

  1. Dust both sides of medallions with cornstarch mixture, shaking off any excess.
  2. In a large pan over medium, heat 1 TBS butter and 1 TBS oil.
  3. Add medallions, cook approx. 8 min (turning once) or until browned.
  4. Empty contents of sauce bag to pan and increase heat to high and bring to a boil.
  5. Reduce heat to low and simmer 10-15 minutes.
  6. Discard rosemary. Serve over mashed potatoes.
